If you want more mint flavor, you can always add more but if you add too much right off the bat…I’m telling you…you’ll regret it! Oh…and peppermint essential oil is not the same as extract. Start off with the amount in the recipe and taste. Just remember that the chips will add some sweetness so taste as you go!Ī word to the wise about peppermint extract….it’s powerful stuff and not to be underestimated. I use Lily's stevia-sweetened chocolate chips and my favorite Lakanto drops in mine but if you have another favorite sweetener on hand feel free. The two things that help sweeten this yummy mocha are the chocolate chips and monk fruit drops. You can use either unsweetened almond or coconut milk…both are yummy! If you need this to be 100% dairy free, simply sub coconut oil for the butter. The results.the perfect peppermint mocha with some amazing froth! Don't have a blender? You could also use a single serve blender, like a Nutribullet or even an immersion blender for this! Now, I am 95% dairy free but I’m able to eat butter with no problem. This ketofied peppermint mocha recipe is so quick and easy to make and, best of all, you likely have all the ingredients right in your pantry and fridge! The key is the coffee and the almond or coconut milk needs to be very warm when they go into the blender with all of the other ingredients so the chocolate melts! This recipe couldn’t be easier…everything goes into the blender, give it whirl and a few seconds later you have decadent, chocolaty, peppermint mocha! Make it special with a dollop of whipped cream and a little shaved sugar free chocolate and you’ll be propelled into mocha bliss! While typically this would call for my regular hot keto coffee, sometimes a special treat is in order, especially around the holidays! This would be an occasion for one of my favorite winter coffee treats…a keto peppermint mocha! Living in Texas our temperatures are pretty mild so you will find me drinking iced coffee year round! That being said, on occasion we have a cold front that moves through, dropping the temperatures into the “hot coffee” realm. I don’t know if I’ve told ya’ll this before, but I’m a complete coffee junkie! Before we moved out to the Ranch, I found myself at the coffee shop every day…and sometimes twice! Nowadays, trips the coffee shop are few and far between! Don’t worry…My beloved espresso machine made the move with me so now amazing coffee drinks…iced or hot…are at my fingertip at a fraction of the price!
